Since I'm on a roll with giving recipes, I'll pass along this one for St. Patrick's Day. It is quick and easy and very good, especially if you like coconut.
Irish Potatoes (cookie/candy)
Ingredients:
1 cup confectioners' sugar (powered sugar)
1 cup shredded coconut
2 tablespoons cream
2 tablespoons ground cinnamon
chopped nuts (if desired)
Directions:
1.Mix the confectioners' sugar and coconut, then add cream. Mix gently with spoon until well blended, to make a "dough"
2. Take about a 1/2 tablespoon of the dough and roll into oblong balls (to look like potatoes).
3. Place cinnamon in a plastic bag and place a few balls at a time into bag and shake until coated.
4. Let stand for 15 minutes. Keep chilled.
Use bits of nut as "eyes" of potato or dust with some cocoa powder to look like dirt. (optional)
...You can also use melted chocolate in place of the cinnamon.
