Baked Peach Oatmeal

This is a really good recipe to try. If you take a stab at it, let me know what you think.

3 Cups Skim Milk
2 Tablespoons Vanilla
1 8oz.carton (1 Cup) refrigerated or frozen
Fat-free egg product, thawed
5 Cups quick-cooling rolled oats
1 ½ Cups firmly packed brown sugar
4 Teaspoons baking powder
3 Teaspoons cinnamon
½ Teaspoon Salt, if desired
¼ Cup Margarine or butter, melted
2 Cups chopped frozen unsweetened
sliced peaches

1. Spray 13 X 9 inch (3 Quart) baking dish with nonstick cooking
spray. In large bowl, combine milk, vanilla and egg product;
blend well. Add oats, brown sugar, baking powder, cinnamon
and salt; mix well. Stir in margarine and peaches until well
combined. Pour mixture into sprayed dish; cover with plastic
wrap. Refrigerate at least 3 hours or overnight.
2. Heat oven to 350 degrees. Uncover baking dish; bake 40 to 45
minutes or until slightly puffed and golden brown. Let stand 10
minutes before serving. Cut into squares; place in individual bowls.
If desired, top with nonfat vanilla yogurt or skim milk.

Tip :Chopped canned sliced peaches packed in unsweetened juice
can be substituted for the frozen peaches.
